Making this original Nigerian meal requires the use of a fermented cassava tuber. After extraction, the raw staple is cooked by stirring while on heat. The fermented starch can be preserved for future use by draining it of water. You may also put the raw staple in a muslin bag and put a heavy object on top of it for a speedy draining of its water content. This has to be done until the starch turns solid to the touch. Four out of these total number of isolates tested positive in such environments and such four isolates also showed antibacterial effects on Gram-positive and Gram-negative microbes such as Bacillus cereus, Staphylococcus aureus, Salmonella enteritidis, Yersinia enterocolitica, Listeria monocytogenes, Escherichia coli, and Escherichia coli (O157). In the majority of cases, the antibacterial properties are because of its bacteriocin production.
